Dried apricots are a type of traditional dried fruit and an important source of carotenoids (vitamin A) and potassium. Used lots in Middle Eastern cookery. When treated with sulphur dioxide (E220), the colour is vivid orange. Organic fruit not treated with sulfur vapour is darker in colour and has a coarser texture. Generally, the lighter the colour, the higher the SO2 content. Light-coloured varieties (with the sulphur content of more than 2000 ppm) are banned in the European Union.
